Earlier, Carlos kicked off his career in the culinary world working with Chef Malarkey at Malarkey’s Fabric Restaurant, Burlap, Gabardine, and Seersuckers. Eventually, in 2013, he started his own restaurant Salt and Cleaver where he served as the executive chef.
Carlos continued with his restaurant for over nine years. Eventually, he opened a Taco Asylum Gourmet Tacos in the Costa Mesa area.
Later on, Carlos joined Chef Malarkey’s restaurant Herb and Wood in Little Italy. He also made appearances on different television cooking competitions like Cutthroat Kitchen and Chopped: Next Generation.
As of now, Carlos has been part of the Food Network and Discovery Plus cooking show, Tournament of Champions since February 2022.
